Two Chillies, Two Purposes: Navigating India's Red Chilli Export Landscape
India is the world's undisputed leader in red chilli production and export, accounting for approximately 36% of global output and over 580,000 MT in export volume during FY2025-26. The two most commercially significant varieties — Guntur S4 from Andhra Pradesh and Byadgi from Karnataka — serve fundamentally different functions in the global food supply chain. Guntur S4 is the workhorse of the heat-focused chilli market, prized for its consistent pungency of 30,000–40,000 Scoville Heat Units (SHU). Byadgi chilli, by contrast, is a color chilli with relatively low heat (8,000–15,000 SHU) but exceptionally high ASTA color values of 180–220, making it indispensable for curry powders, paprika blends, and natural food colorants. Understanding these differences is critical for importers.
Guntur S4: The Global Standard for Heat and Versatility
Guntur S4 (Sannam S4) is the most widely exported Indian chilli grade, favored by spice grinders, hot sauce manufacturers, and industrial food processors worldwide. Grown primarily in Andhra Pradesh's Guntur, Prakasam, and Khammam districts, S4 chillies deliver consistent capsaicin levels that translate to reliable 30,000–40,000 SHU heat profiles. The variety also offers moderate color (80–120 ASTA), making it suitable for dual-purpose applications in curry powders and chilli flakes. FOB pricing for S4 dry chilli (stemless, teja variety) ranges from $1,200–$1,400/MT depending on moisture content and ASTA value. Key export markets include Malaysia, Sri Lanka, Bangladesh, the UAE, and Indonesia.
Choose Guntur S4 when heat is the primary requirement and moderate color is acceptable. Choose Byadgi when deep red color is essential and low heat is preferred — typical for paprika replacements, natural colorants, and premium curry powder blends. Many global spice blenders use a 70:30 S4-to-Byadgi ratio for balanced heat-color profiles.
Byadgi: The Premium Color Chilli Commanding Global Attention
Karnataka's Byadgi chilli is one of India's GI-tagged (Geographical Indication) agricultural products, celebrated for its wrinkled skin, deep crimson color, and mild heat that doesn't overpower other flavors in a blend. With ASTA color values of 180–220 — compared to 80–120 for Guntur S4 — Byadgi is the preferred choice for European paprika manufacturers, US food colorant suppliers, and Japanese spice houses. FOB pricing for premium Byadgi ranges from $1,600–$1,900/MT, reflecting the variety's limited growing region and labor-intensive harvesting process. The 2026 Byadgi crop has been strong, with Haveri and Dharwad districts reporting yields 10% above the five-year average. Radiance Overseas offers both Guntur S4 and Byadgi in whole, crushed, and powder forms.
